Berries, cherries and Strawberries oh my! Best ways to use up your leftover berries

Who doesn’t love snacking on beautiful juicy berries, especially in the hotter seasons! With these berry-licious fruits aplenty at the moment, you may have caught yourself buying 3 punnets on sale and forgetting them all stacked up in the fridge (tell us we’re not the only ones). We have a few tips and tricks up our sleeves to transform your tired little berries into some super scrummy snacks and the like.
Probably the most obvious of them all. Freeze your berries! You can freeze them as is in ziplock bags or to create fancy looking beverages, pop a berry or two into each section in an ice cube tray, freeze and once frozen add to drinks for a cooling and colourful concoction For dessert lovers *hands go up* you can turn your leftover berries into syrups and sauces to pour over everything from ice cream to pancakes. Simply cook your berries down in a saucepan with sugar until it reduces into syrupy goodness.
Its salad season and when it comes to salad dressings, berry vinaigrette is one of our absolute favourites! To make a mouthwatering berry vinaigrette here’s what you’ll need.
200g strawberries or raspberries
2tsbp apple cider vinegar
2 tbsp olive oil
1 small clove of garlic finally chopped or minced
1-2 tsp sugar
Small bunch of fresh thyme leaves
Salt and freshly ground pepper
Wizz it up and drizzle over a simple salad of rocket, Parmesan, pine nuts and thinly sliced pear. DELISH!

What you’ll need:
4 cups of frozen berries (any berries will do, mix it up with a variety!)
1 cup of coconut milk
A drizzle of stevia to taste – or honey / maple syrup.
Pop it all into a food processor and wait for it to firm up.
Either consume immediately (we would) or pop it in a metal container and freeze for later.
