Veggies in Disguise – Awesome Vegetable Alternatives to replace simple carbs

Carbs are life, there’s no doubt about that! But when it comes to maintaining a healthy diet, replacing some carbs with veggie alternatives is a great way of reducing carb intake without feeling deprived. There are two types of carbohydrates, simple and complex. Complex carbs like wholegrain and fibre rich foods keep us fuller for longer and provide a slow release of energy, however simple carbs are usually full of sugar and only provide a quick buzz of energy before that ‘sluggish’ feeling that hits.
Luckily there are some amazing carb alternatives that require minimal faffing, fuss and prep as they’re now pre packed and readily available in Woolworths which means you can have your favourite spag bol and eat your zoodles too!

Zoodles, or zucchini noodles are a fantastic substitute to pasta as they hold the same long ‘noodle’ shape making them perfect for twirling around your fork and they make a great sturdy base for sauces. If you’re wondering what to place lasagne sheets with then why not try layers of eggplant! Its super delicious and a great way to get more veggies on your plate! But what about a rice replacement? Cauliflower rice (finely chopped cauliflower) is a super healthy substitute and it’s the same colour as white rice so you may even have luck tricking the kids into eating it!

A big trend at the moment is sweet potato toast, and yes… you heard that right. Simply cut your sweet potato length ways into 1-2 cm thick slices, pop it in the toaster as you would a slice of toast and wait for it to pop! PSA- Its scrumptious when slathered with cream cheese! Another trend at the moment are ‘naked’ burgers and bowls. And without the removal of any clothes, you can have your burger and eat it too! Simply use lettuce cups or whole cooked field mushrooms as a great bun substitute. Naked bowls are basically all the ingredients you would get in say, a burrito but minus the wrap! Genius! And guess what, if chips are your weakness you can try edamame or kale chips and trust us, they taste so much better than they sound! Baked and sprinkled with salt, these veggie chips will give a satisfying crunch that you’ll love to munch on. You can try all these veggie variations and varieties conveniently sold at Woolworths!
